Italian Roast Beef
| This isn't necessarily a traditional Italian recipe,
but it's my dad's and he's Italian...so that's good enough for me. It
cooks in just over an hour, looks great and tastes even better. Definitely
not a vegetarian meal!

4 lbs roast beef
1/3 cup Olive Oil (the best you can get)
Salt
Pepper
Directions
- Pre-heat oven to 450 degrees for 20 minutes (oven must be very hot when
you start cooking)
- Tie a string around the meat so that it creates a grid around the whole
thing in 2 inch squares
- Generously salt and pepper the meat
- Pour ½ cup olive oil into the bottom of a baking pan
- Place the roast beef in the pan and turn it around making sure it is well
oiled on all sides.
- Place roast in the oven
- Cook for 20 minutes on high temp
- Lower temperature to 375 degrees and cook for another hour.
- Turn the roast several times throughout the cooking time.
Tips
- When the roast is done, it should develop a crust all
around it.
- Choose a roast that is evenly shaped. A roast that is
very thin on the ends and thick in the middle will not cook evenly.
- If you want the roast to be more well done, cook it for
an additional 20-30 minutes.
- Serve with rosemary oven potatoes and a fresh mixed salad.
